Farfalle Pasta

Spinach gives these pasta a lovely green colour as well as makes them more nutritive. This is a Sanjeev Kapoor exclusive recipe.

  • for dusting Refined flour (maida)
  • as required spinach pasta dough fresh

Method

  1. Divide the dough into two equal portions.
  2. Dust worktop with some flour, place oneportion and roll out to a thin sheet. Cut the sheet into roundels with a medium sized cookie cutter. Press the opposite edges of each roundel to shape them into farfalle pasta.
  3. Place remaining portion, dust some flour on top, roll out to make a thin sheet and cut into squares. Press the opposite edges of each square to shape them into farfalle pasta.
  4. Use as required.
