Ingredients for Creamed Pumpkin And Apple Soup Recipe

  • Red Pumpkin 250 grams

  • Apples 2

  • Oil 2 teaspoons

  • Bay leaves 2

  • Onion chopped 1 large

  • Vegetable stock 1 1/2 cups

  • Salt to taste

  • Black peppercorns crushed 1/2 teaspoon

  • Curry powder 2 teaspoons

  • Milk 1 cup

  • Lemon juice 2 teaspoons

  • Fresh parsley chopped 1 tablespoon


Step 1

Peel and grate red pumpkin. Core and roughly chop apples. Heat oil in a pan, add bay leaves and chopped onion and sauté till translucent. Add pumpkin and apples. Cook on high heat for a couple of minutes stirring continuously.

Step 2

Add half the stock, salt and freshly crushed peppercorns and cook the vegetables until soft. Remove the bay leaves and add curry powder and mix. Cool the vegetables and puree them in a mixer.

Step 3

Heat pureed vegetables and add the remaining stock and milk. Mix well and bring to a boil. Add lemon juice and mix well. Serve hot garnished with fresh parsley.
