Ingredients
- 250 grams red pumpkin
- 2 apples
- 2 teaspoons oil
- 2 bay leaves
- 1 large onion chopped
- 1 1/2 cups vegetable stock
- Salt to taste
- 1/2 teaspoon crushed black peppercorns
- 2 teaspoons curry powder
- 1 cup milk
- 2 teaspoons lemon juice
- 1 tablespoon fresh parsley, chopped
Method
- Peel and grate red pumpkin.ore and roughly chop apples.
- Heat oil in a pan, add bay leaves and chopped onion and sauté till translucent.
- Add pumpkin and apples. Cook on high heat for a couple of minutes stirring continuously.
- Add half the stock, salt and freshly crushed peppercorns and cook the vegetables until soft.
- Remove the bay leaves and add curry powder and mix.
- Cool the vegetables and puree them in a mixer.
- Heat pureed vegetables and add the remaining stock and milk. Mix well and bring to a boil.
- Add lemon juice and mix well.
- Serve hot garnished with fresh parsley.
