By Sanjeev Kapoor 04 Nov 2014 in Recipes Course New Update Main Ingredients Red Pumpkin, Apples Cuisine Fusion Course Soups Prep Time 0-5 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Advertisment Ingredients list for Creamed Pumpkin And Apple Soup 250 grams Red Pumpkin 2 Apples 2 teaspoons Oil 2 Bay leaves 1 large Onion chopped 1 1/2 cups Vegetable stock to taste Salt 1/2 teaspoon Black peppercorns crushed 2 teaspoons Curry powder 1 cup Milk 2 teaspoons Lemon juice 1 tablespoon Fresh parsley chopped Method Advertisment Peel and grate red pumpkin. Core and roughly chop apples. Heat oil in a pan, add bay leaves and chopped onion and sauté till translucent. Add pumpkin and apples. Cook on high heat for a couple of minutes stirring continuously. Add half the stock, salt and freshly crushed peppercorns and cook the vegetables until soft. Remove the bay leaves and add curry powder and mix. Cool the vegetables and puree them in a mixer. Heat pureed vegetables and add the remaining stock and milk. Mix well and bring to a boil. Add lemon juice and mix well. Serve hot garnished with fresh parsley.
