Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken Maryland Recipe

  • Chicken cut into 8 pieces 800 grams

  • Eggs to taste

  • Black peppercorns crushed to taste

  • Lemon juice 2 teaspoons

  • Red chilli powder 1/2 teaspoon

  • Mustard powder 1/2 teaspoon

  • Fresh coriander leaves finely chopped 1 tablespoon

  • Refined flour (maida) 3 tablespoons

  • Eggs 2

  • Oil to deep fry

  • Bread crumbs 1/2 cup

Method

Step 1

Sprinkle salt, crushed peppercorns and lemon juice on the chicken pieces. Place them in a pressure cooker, add half a cup of water and cook under pressure for one whistle.

Step 2

Remove and pat the chicken pieces dry. Add salt, red chilli powder, mustard powder and coriander leaves to the refined flour and place the mixture on a plate.

Step 3

Separate the egg yolks and whites and beat the egg whites. Roll the chicken pieces in the spiced refined flour so that they are well coated. Heat sufficient oil in a kadai. Dip the flour coated chicken pieces in the beaten egg whites and roll in the breadcrumbs and deep fry on medium heat for four to five minutes or until golden brown. Drain and place on an absorbent paper.

Step 4

Serve hot with green salad or barbeque sauce.
