Ingredients
- 1½ cups fresh orange juice
- 1½ teaspoons orange marmalade
- 12-15 fresh orange segments, pips discarded
- 3 tablespoons butter
- 1 tablespoon grated ginger
- Salt to taste
- 1 tablespoon refined flour (maida)
- 1 teaspoon crushed red chillies
Method
- Heat 2 tablespoons butter in a non stick pan. Add ginger and saute for 1 minute.
- Add orange juice, salt and marmalade. Mix well and cook for 2-3 minutes.
- Combine remaining butter with refined flour in a bowl. Mix well and divide the mixture into small portions.
- Add red chillies to pan and mix. Add butter-flour mixture portions and mix well with a whisk.
- Add orange segments, mix well and cook till the sauce thickens.
- Serve hot with Classic Roast Chicken.
