Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for tandoori mushroom Recipe

  • Button Mushrooms 20 medium

  • Tomatoes 3 medium

  • Onions 3 medium

  • Green capsicums 3 medium

  • Oil 100 millilitres

  • Salt to taste

  • Lemon juice 2 tablespoons

  • Turmeric powder 1/2 teaspoon

  • Fennel seed (saunf) powder 1 teaspoon

  • Yogurt 2 cups

  • Yellow chilli powder 1 teaspoon

  • Green chillies chopped 1/2 teaspoon

  • Fresh coriander leaves chopped 1 tablespoon


Step 1

Clean, wash and par boil the mushrooms. Peel and cut onions into 1½ inch squares. De-seed and cut capsicums into 1½ inch squares. Halve the tomatoes, remove seeds and cut into 1½ inch squares.

Step 2

For marination, beat the yogurt till smooth, add lime juice, turmeric powder, fennel powder, yellow chilli powder, chopped green chillies and seasonings and mix well.

Step 3

Marinade the mushrooms and other vegetables in it for 1 hour. Skewer the vegetables onto barbeque sticks in this fashion : three mushroomsfollowed by a capsicum, tomato, onion and end with a mushroomCook them in the tandoor or barbeque for about 10 minutes. Serve hot with mint chutney and onion salad. .
