Ingredients list for Zucchini Alla Scapece

  • 2 medium Zucchini cut into round slices
  • Olive oil shallow fry
  • 2 large Garlic chopped
  • 1 tablespoon Mint leaves chopped
  • to taste Salt
  • 1/4 teaspoon Black pepper powder
  • 1/4 cup Balsamic vinegar
  • sprigs Mint leaves

Method

  1. Heat the olive oil in a pan and shallow-fry the zucchini; drain on absorbent paper and set aside to cool.
  2. Arrange the zucchini rounds in a serving platter and sprinkle with garlic, mint, salt and pepper powder. Drizzle the balsamic vinegar over the salad and leave to marinate for at least half an hour.
  3. Serve at room temperature or chilled, garnished with a sprig of mint.
