Ingredients
- ¼ cup roasted black peppercorns
- ¾ cup oil
- 3 medium onions, sliced
- 30 garlic cloves, sliced
- 4 inch ginger pieces, sliced
- ¾ cup oyster sauce
- 1½ cups tomato ketchup
- ½ cup + 2 tablespoons vinegar
- 5 teaspoons sugar
- 3 tablespoons dark soy sauce
- 3½ teaspoons salt
- 8 button mushrooms
- 1 tablespoon lemon juice
Method
- Crush the roasted black peppercorns in a mixer.
- Heat oil in a pan. Add onions and sauté for a minute. Add ginger and garlic and sauté for two minutes.
- Add peppercorns and continue to sauté for two minutes. Add oyster sauce and tomato ketchup and mix.
- Add vinegar, sugar, dark soy sauce and salt. Mix and cook till the desired consistency is reached.
- String the button mushrooms onto toothpicks and place them on a grill pan. Sprinkle salt and lemon juice and grill.
- Grind the sauce mixture and transfer into a bowl.
- Sprinkle some water over the mushrooms, cover and cook till the mushrooms are done. Put some of the sauce and toss and cook for one minute.
- Serve hot.
