Ingredients list for Vegetable Pot Rice - SK Khazana
- 3 cups Basmati rice boiled
Method
- Heat oil in a deep non-stick pan, add garlic, ginger, celery and spring onions, mix and sauté for 1-2 minutes.
- Add yellow squash, green zucchini, carrot, button mushrooms and shitake mushrooms, mix well and sauté for 1-2 minutes.
- Add mixed capsicums and mix well, Add salt, crushed black peppercorns, soy sauce and red chilli sauce, mix well and saute for 1 minute.
- Add vegetable stock, mix well, cover and cook for 2-3 minutes.
- Add cornflour slurry, mix well and cook till the mixture thickens.
- Add bok choi and mix. Add basmati rice and mix well. Cook for 1 minute.
- Add spring onion greens, mix and take the pan off the heat.
- Transfer the rice into a serving bowl, garnish with spring onion greens and serve hot.
