Ingredients list for Strawberry Mousse
- 500 grams Strawberries washed & hulled
- 1 cup Double Cream whisked
- 4 tablespoons Port or sweet sherry
- 4 teaspoon Gelatin
- 1 1 /4 cups Double cream
- a few sprigs Thyme
Method
- Puree strawberries (keeping aside a few for garnish) in a food processor along with castor sugar and yogurt.
- Gently warm the port or sherry, sprinkle gelatine on the surface and allow to sponge.
- Stir in thoroughly.Allow to cool.
- Whisk into the strawberry mixture.Whip the cream stiffly.
- Keep aside a little for garnishing and fold in the rest gently into the strawberry mixture.
- Pour into glasses and refrigerate to set.
- Garnish with reserved whipped cream piped on top, whole strawberries and thyme sprigs.
