Strawberry Mousse

An all time favourite – this mousse has strawberries for that extra excitement. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Strawberry Mousse

  • 500 grams Strawberries washed & hulled
  • 1 cup Double Cream whisked
  • 4 tablespoons Port or sweet sherry
  • 4 teaspoon Gelatin
  • 1 1 /4 cups Double cream
  • a few sprigs Thyme

Method

  1. Puree strawberries (keeping aside a few for garnish) in a food processor along with castor sugar and yogurt.
  2. Gently warm the port or sherry, sprinkle gelatine on the surface and allow to sponge.
  3. Stir in thoroughly.Allow to cool.
  4. Whisk into the strawberry mixture.Whip the cream stiffly.
  5. Keep aside a little for garnishing and fold in the rest gently into the strawberry mixture.
  6. Pour into glasses and refrigerate to set.
  7. Garnish with reserved whipped cream piped on top, whole strawberries and thyme sprigs.
