How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Prep Time : 11-15 minutes

Cook time : 16-20 minutes

Ingredients for Soya Milk Brown Rice Pudding Recipe

  • Brown rice soaked for an hour 1/3 cup

  • Soya milk 3 cups

  • Brown sugar 8 tablespoons

  • Seedless dates slivered 6-8

Method

Step 1

Heat soya milk in a thick bottom pan.

Step 2

Add brown rice and cook till it is done. Add dates and continue to cook till the rice is soft.

Step 3

Transfer into four individual serving bowls and chill. Spread two tablespoons of brown sugar on top of each and caramelise it using a brulee torch.

Step 4

Serve.
