  • 1 1/2 cups Fresh bread crumbs


  1. Preheat oven to 160°C/ 325°F. Grease an ovenproof mould with 2 tbsps butter.
  2. Heat milk in a non stick pan. Place the breadcrumbs in a bowl. Add remaining butter and mix well.
  3. Add lemon rind. Add sugar to milk and stir till it dissolves. Break eggs into a bowl and beat. Add hot milk to the breadcrumbs and let it soak. Add raisins and eggs and mix.
  4. Pour the mixture into the prepared mould, taking care that it is not filled to the top.
  5. Pour some water into a baking tray, keep the mould in it and bake in the preheated oven for 50-60 minutes.
  6. Mix a jam of your choice with a little water to make a sauce. Drizzle the sauce over the pudding and serve hot.
