Ingredients
- Pizza dough as required
- Pizza sauce for spreading
- Refined flour (maida) for dusting
- Olive oil for brushing
- Fresh basil leaves as required
- 1 cup grated mozzarella cheese
Method
- Place the proven dough on the worktop and knock back to release excess air. Dust with some flour and knead well.
- Roll out the dough into ½ cm thick sheet and trim the ends to shape into a square sheet.
- Cut the sheet into 3-4 inch thick strips and further cut the strips into triangles.
- Brush some olive oil and spread pizza sauce on each triangle. Place 1 basil leaf in the centre and spread some mozzarella cheese on one line of each triangle and roll to shape into croissant.
- Preheat oven to 180˚C.
- Grease a baking tray with some olive oil, place the croissants, cover with damp muslin cloth and set aside to prove for 10-15 minutes.
- Put the tray into the preheated oven and bake for 15-20 minutes. Remove from oven and slightly cool.
- Serve warm.
