Ingredients
- 4 tablespoons pesto sauce
- 1/2 cup small shaped pasta
- 1 courgette, diced
- 1 small potato, diced
- 1 shallots, chopped
- 1 carrot, diced
- 3 medium tomatoes, chopped
- 5 cups vegetable stock
- 10 to taste French beans, cut into lengthways
- Salt to taste
- Black pepper powder to taste
- 1/2 cup green peas
- 1 tablespoon sundried tomato, paste
- to sprinkle parmesan cheese, grated
Method
- Place the courgette, potato, shallot, carrot and tomatoes in a large pan.
- Add vegetable stock and season with salt and pepper powder. Bring the mixture to boil, reduce heat and simmer Add the French beans, green peas and pasta and cook till the pasta is tender.
- Adjust the seasoning. Put the soup into individual bowls.
- Mix together pesto sauce and sun dried tomatoes paste and stir into each bowl.
- Sprinkle grated parmesan cheese on the soup in each bowl and serve hot.
