Ingredients
- Fresh pizza dough for 2 pizza bases
- ½ cup pesto sauce
- 200 grams cottage cheese (paneer)
- Olive oil as required
- A little dry refined flour (maida)
- 2 medium onions
- 1 medium red capsicum
- 16 cherry tomatoes
- 100 grams mozzarella cheese
- 12-16 black olives,sliced
Method
- Preheat oven to 180° C.
- Add a little olive oil to the dough and knead lightly. Divide the dough into 2 equal portions and roll them into balls. Roll each ball in dry flour and pat to a round and slightly thick roundel.
- Grate the cottage cheese into a bowl, add pesto sauce and mix well.
- For each pizza, lightly grease a pan with oil, place a dough roundel in it, spread a generous layer of cottage cheese-pesto mixture over it.
- Lightly crush the onion and red capsicum strips. Spread some of it over the cottage cheese mixture. Spread a few halved cherry tomatoes.
- Slice the mozzarella cheese. Tear a couple of slices into small pieces and spread on top of the vegetables. Spread a few more halved red cherry tomatoes on top of the cheese. Sprinkle a few black olive slices.
- Keep the pan in the preheated oven and bake for 15-20 minutes or till the pizza base gets cooked and the cheese melts.
- Keep each pizza on individual serving plate and serve hot.
