Ingredients 

  • 300 grams King prawns
  • Salt to taste
  • ½ teaspoon black pepper powder
  • 2 tablespoons light soy sauce
  • 2 tablespoons cornflour
  • Oil for deep-frying
  • 3 garlic cloves, chopped
  • ¾ inch ginger, chopped
  • 4 black peppercorns, crushed
  • 3 stalks spring onion greens, sliced

Method

  1. Chop garlic and ginger finely.
  2. Take prawns in a bowl, add salt, ½ tsp pepper powder, 1 tbsp dark soy sauce and 1 tbsp of cornflour and mix well. Set aside, preferably in the refrigerator, to marinate for 15 minutes.
  3. Heat sufficient oil in a pan, add the marinated prawns and deep-fry for about ½ minute.
  4. Drain away the oil, keeping a little of it in the pan. Add the garlic and ginger and sauté for 2 minutes on high heat.
  5. Diagonally slice the spring onion greens. Mix the remaining cornflour with 2 tbsps of water.
  6. Add the prawns and remaining soy sauce and toss. Add salt, remaining pepper powder, crushed black peppercorns and cornflour mixture and mix well. Add spring onion greens and stir-fry on high heat for 1-2 minutes.
  7. Transfer into a serving bowl and serve hot.
