Ingredients
- 300 grams King prawns
- Salt to taste
- ½ teaspoon black pepper powder
- 2 tablespoons light soy sauce
- 2 tablespoons cornflour
- Oil for deep-frying
- 3 garlic cloves, chopped
- ¾ inch ginger, chopped
- 4 black peppercorns, crushed
- 3 stalks spring onion greens, sliced
Method
- Chop garlic and ginger finely.
- Take prawns in a bowl, add salt, ½ tsp pepper powder, 1 tbsp dark soy sauce and 1 tbsp of cornflour and mix well. Set aside, preferably in the refrigerator, to marinate for 15 minutes.
- Heat sufficient oil in a pan, add the marinated prawns and deep-fry for about ½ minute.
- Drain away the oil, keeping a little of it in the pan. Add the garlic and ginger and sauté for 2 minutes on high heat.
- Diagonally slice the spring onion greens. Mix the remaining cornflour with 2 tbsps of water.
- Add the prawns and remaining soy sauce and toss. Add salt, remaining pepper powder, crushed black peppercorns and cornflour mixture and mix well. Add spring onion greens and stir-fry on high heat for 1-2 minutes.
- Transfer into a serving bowl and serve hot.
