Ingredients list for Pav Bhaji Roll Ups

Method
- To make pav bhaji, heat Nutralite in a pan and add ¾ of the onions. Sauté till light brown. Add green chillies, ginger paste and garlic paste. Sauté for 30 seconds.
- Add half the tomatoes and cook on medium heat for 3-4 minutes, stirring continuously or till fat separates from the masala.
- Add green capsicum, green peas, cauliflower, potatoes and 1½ cups of water. Bring it to a boil and simmer for 10 minutes, pressing with the back of the spoon a few times, till all the vegetables are completely mashed.
- Add pav bhaji masala, salt and the remaining tomatoes. Cook on medium heat for 2 minutes, stirring continuously.
- Place the bhaji in a kadai and simmer for 8-10 minutes, stirring often, till all the moisture evaporates and the bhaji is dry. Add coriander leaves and mix. Transfer into a bowl and set aside.
- For onion-cheese mixture, combine sliced onion, sliced tomatoes, grated cheese and red chilli powder. Mix well and set aside.
- Heat a tawa and lightly warm the tortillas on both the sides.
- Place a warmed tortilla on a square piece of aluminum foil. Spread ¼ of the bhaji over the tortilla and generously sprinkle a fourth of the onion-cheese mixture over it.
