The most common impression about Mexican food is that it is hot and wholesome and has many similarities with Indian food. And like Indian cuisine Mexican is not one single cuisine but many. There is a feast of flavours for the food lover as the waters of the Gulf of Mexico and the Pacific Ocean teem with fish, while the adjoining regions bloom with luscious fruit like pineapple and papayas. The high plateau yields wonderful vegetables and the north is cattle country…..and to bind all these in one single string are chillies…in every shape, colour and size, from the subtle to the strong, producing a signature to Mexican cuisine.

Ingredients for Mild Prawns With Red Chilli Salsa Recipe

  • Prawns peeled deveined with tails intact 16-18

  • Olive Oil 5 tablespoons

  • Garlic crushed 1 cloves

  • Lemon juice 3 tablespoons

  • Salt to taste

  • Black pepper powder to taste

  • Tomato seeded and chopped finely 1 large

  • Fresh red chilli seeded and chopped finely 1

  • Fresh parsley chopped 1 tablespoon

  • Lemon slices for garnishing

Method

Step 1

Mix together two tablespoons olive oil, garlic, one and a half tablespoons lemon juice, salt and pepper powder. Add prawns, mix and set aside to marinate for thirty minutes.

Step 2

Thread the prawns onto skewers. Heat the Grill Pan and place the prawns in it. Pour the remaining marinade on top of the prawns and cook for four minutes or till pink.

Step 3

In another bowl, mix together the remaining oil, remaining lemon juice, tomato, red chilli, parsley, salt and pepper powder. Remove the prawns onto a serving plate and pour the dressing on them.

Step 4

Garnish with lemon slices and serve hot.
