Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Mango Chilli Chicken - SK Khazana Recipe

  • Boneless chicken cut into 1 inch pieces 250 grams

  • Fresh ripe mango puree 1 cup

  • Salt to taste

  • Black peppercorns crushed as required

  • Cornflour/ corn starch 2 tablespoons

  • Egg 1

  • Oil 1 tablespo to deep fry

  • Garlic finely chopped 1 tablespoon

  • Ginger finely chopped 1/2 tablespoon

  • Celery finely chopped 1 tablespoon

  • Spring bulbs finely chopped 3-4

  • Soy sauce 1 teaspoon

  • Oyster sauce 2 teaspoons

  • Chicken stock 1 cup

  • Cornflour slurry 2 tablespoons

  • Spring onion greens diagonally sliced 1 tablespo for garnish

Method

Step 1

Put chicken pieces in a bowl. Add salt, crushed peppercorns, cornflour and egg and mix well. Set aside.

Step 2

Heat sufficient oil in a kadai. Deep-fry chicken pieces till golden brown. Drain on absorbent paper.

Step 3

Heat 1 tablespoon oil in a non-stick pan. Add garlic, ginger and celery, mix and sauté for a minute.

Step 4

Add spring onion bulbs and red chillies and mix. Add soy sauce and oyster sauce, mix well and cook for a minute.

Step 5

Add stock, stir and bring to a boil. Add mango puree and mix well. Add salt and crushed peppercorns, mix well and cook for a minute.

Step 6

Add slurry, mix and cook till the sauce thickens. Add fried chicken pieces, mix well and simmer for a minute. Add spring onion greens and mix well.

Step 7

Garnish with spring onion greens and serve hot.
