Ingredients
- 1 boneless chicken breast
- zest of 2 lemons
- 2 tablespoons olive oil
- 1 medium onion sliced
- 8 cups chicken stock
- ½ teaspoon red chilli flakes
- ¼ cup couscous
- Salt to taste
- Crushed black peppercorns to taste
- ¼ cup chopped chives
Method
- Heat olive oil in a non-stick pan. Add onion and sauté for three to four minutes.
- Add chicken stock, chicken breast, lemon zest and chilli flakes and mix well. Increase heat, cover and bring to a boil. Reduce heat and simmer for five minutes.
- Add the couscous, salt and crushed peppercorns, mix well and simmer for five minutes. Switch off the heat.
- Remove the chicken and shred using a fork. Put the shredded chicken back in the pan, add feta cheese and chives and mix well.
- Serve warm.
