By Sanjeev Kapoor 18 Aug 2016 in Recipes Non Veg New Update Main Ingredients Crepes , Refined flour (maida) Cuisine Other Course Main Course Vegetarian Prep Time 16-20 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Non Veg Ingredients Crepes 1 1/2 cups refined flour (maida) 4 eggs 1 cup milk 1 tablespoon salt 1 tablespoon oil For filling 2 medium spinach bunches 1 tablespoon butter 1 medium onion, finely chopped 1/2 cup feta cheese 1/2 cup grated ricotta cheese 2 tablespoons grated parmesan cheese Salt to taste Black pepper powder to taste Method To make the crepes combine eggs, milk, flour, salt and oil in a bowl. Add three- fourth cup water and beat until smooth. Snip off the stems of the spinach leaves and blanch them. Drain and squeeze to remove extra moisture and then roughly chop. To make the filling, heat a pan. Add butter and when it melts, add the onion and sauté till golden. Place the spinach, onion, Feta cheese, Ricotta cheese, salt and pepper powder in a bowl and mix well. Heat a skillet, pour a ladleful of batter on it and cook on a medium heat, only on one side, until golden brown. Place some of the spinach mixture in the center and fold. Sprinkle parmesan cheese on top and gratinate under a salamander till the cheese melts and turns golden in colour. Remove it and serve hot.
