By Sanjeev Kapoor 04 Nov 2014 in Recipes Veg New Update Creamed Pumpkin And Apple Soup Main Ingredients Red Pumpkin, Apple Cuisine Fusion Course Soups Prep Time 10-15 minutes Cook time 10-15 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients 250 grams red pumpkin 2 apples 2 teaspoons oil 2 bay leaves 1 large onion chopped 1 1/2 cups vegetable stock Salt to taste 1/2 teaspoon crushed black peppercorns 2 teaspoons curry powder 1 cup milk 2 teaspoons lemon juice 1 tablespoon fresh parsley, chopped Method Peel and grate red pumpkin.ore and roughly chop apples. Heat oil in a pan, add bay leaves and chopped onion and sauté till translucent. Add pumpkin and apples. Cook on high heat for a couple of minutes stirring continuously. Add half the stock, salt and freshly crushed peppercorns and cook the vegetables until soft. Remove the bay leaves and add curry powder and mix. Cool the vegetables and puree them in a mixer. Heat pureed vegetables and add the remaining stock and milk. Mix well and bring to a boil. Add lemon juice and mix well. Serve hot garnished with fresh parsley.
