Ingredients  

  • 1 medium watermelon, peeled, seeded and cut into small pieces
  • 2 inch ginger, roughly chopped
  • 4-5 fresh coriander stems
  • 1 teaspoon roasted cumin powder
  • Salt to taste
  • 1 teaspoon sugar
  • 1 tablespoon lemon juice
  • ½ teaspoon Tabasco sauce
  • A few mint sprigs for garnishing  

Method 

  1. Place watermelon pieces, ginger, coriander stems, cumin powder, salt, sugar, lemon juice and Tabasco sauce in a blender jar and blend till smooth. Strain into a jug and chill in the refrigerator. 
  2. Serve chilled garnished with mint sprigs.
