Ingredients list for Cold Apple Soup

  • 2 medium Green Apple
  • 1/4 medium Red Apple
  • to taste Salt
  • 3 teaspoons Sugar
  • to taste Black pepper powder
  • 1 cup White wine
  • 1 cup Vegetable stock chilled
  • 1 tablespoon Butter

Method

  1. Chop green apples roughly. Heat butter in a deep non stick pan. Add apples and sauté for a minute.
    Add salt, sugar and black pepper powder and sauté till apples are lightly browned.
  2. Add white wine and cook till apples soften. Transfer into a blender jar, add chilled vegetable stock and blend till smooth. Finely chop red apple for garnish.
  3. Pour the blended soup into a serving bowl, garnish with red apple and serve cold.
