Heat butter in a deep non stick pan. Add apples and sauté for a minute. Add salt, sugar and black pepper powder and sauté till apples are lightly browned. Add white wine and cook till apples soften. Transfer into a blender jar, add chilled vegetable stock and blend till smooth. Finely chop red apple for garnish. Pour the blended soup into a serving bowl, garnish with red apple and serve cold.
