Ingredients list for Chowli and Brown Rice Stew

  • 1 cup Black eyed beans soaked and boiled
  • 2 tablespoons Brown Rice soaked
  • 1 tablespoon Olive oil
  • 1 Bay leaf
  • 1 tablespoon Garlic chopped
  • 2 medium Onions chopped
  • 1 medium Carrot peeled
  • 1 medium Potato peeled
  • to taste Salt
  • 1 teaspoon Crushed black peppercorns
  • 1 bottle Arrabiata sauce

Method

  1. Heat olive oil in a deep non stick pan, add bay leaf, garlic and onions and saute for 2 minutes. Cut carrot into large chunks and add to the pan. Cut potato into ¾ inch cubes and add.
  2. Add black eyed beans, brown rice, 3 cups water, salt, crushed black peppercorns and mix well. Cover and cook till rice and vegetables get completely cooked.
  3. Add arrabiata sauce and mix well and cook for 2 minutes more. Add a little freshly crushed peppercorns and mix well. Transfer into a serving bowl and serve hot.
