Ingredients list for Chowli and Brown Rice Stew
- 1 cup Black eyed beans soaked and boiled
- 2 tablespoons Brown Rice soaked
- 1 tablespoon Olive oil
- 1 Bay leaf
- 1 tablespoon Garlic chopped
- 2 medium Onions chopped
- 1 medium Carrot peeled
- 1 medium Potato peeled
- to taste Salt
- 1 teaspoon Crushed black peppercorns
- 1 bottle Arrabiata sauce
Method
- Heat olive oil in a deep non stick pan, add bay leaf, garlic and onions and saute for 2 minutes. Cut carrot into large chunks and add to the pan. Cut potato into ¾ inch cubes and add.
- Add black eyed beans, brown rice, 3 cups water, salt, crushed black peppercorns and mix well. Cover and cook till rice and vegetables get completely cooked.
- Add arrabiata sauce and mix well and cook for 2 minutes more. Add a little freshly crushed peppercorns and mix well. Transfer into a serving bowl and serve hot.
