Ingredients
- 6 slices white bread
- 6 medium tomatoes, quartered
- 1 medium cucumber, roughly chopped
- 3-4 garlic cloves, chopped
- ½ cup olive oil
- Salt to taste
- Crushed black peppercorns to taste
- 1 medium green capsicum, seeded and roughly chopped
- 2 tablespoons wine vinegar
- For the garnish
- 1 slice white bread, cut into ½-inch cubes
- 1 small green capsicum, chopped
- 1 small onion, chopped
Method
- Discard edges of bread slices, break into pieces and place in a bowl. Add water and soak the bread pieces for 5 minutes.
- Combine tomatoes, cucumber, garlic, soaked bread pieces, olive oil, salt, crushed peppercorns and water in a blender. Blend well.
- Add capsicum and vinegar and blend again.
- Strain the soup into a bowl and chill in a refrigerator.
- Pour the soup into individual Martini glasses. Garnish with bread cubes, chopped capsicum and chopped onion. Serve chilled.
