If there is one vegetable that is truly a nutritional hero then it is bound to be the carrot. A goldmine of nutrients, this is the reason they can be even termed as worth the other ‘karat’ (as in gold)! Ranging in colours from orange, black, pink to red, yellow and white, this delicious vegetable is within the reach of rich and poor alike and is rightly called the universal root. The best role that this winter vegetable can play – chomp on one as it is an excellent snack!

Ingredients for Carrot Cake Recipe

  • carrots grated 3-4 medium

  • Eggs 3 tablespoons

  • Apple 1 medium

  • Orange juice 1/3 cup

  • Egg 1

  • Sugarfree Natura 18 measure

  • Refined flour (maida) 1 1/2 cups

  • Baking powder 1/2 teaspoon

  • Soda bicarbonate 1/2 teaspoon

  • Cinnamon powder 1 teaspoon

Method

Step 1

Preheat oven to 180˚C. Grease a cake 9 inch cake tin with oil. Grate apple into a bowl. Add carrots and mix.

Step 2

Add orange juice and mix. Break the egg into it and mix well.

Step 3

Add Sugar Free Natura and mix well. Sieve refined flour, baking powder, soda bicarbonate, cinnamon powder into the above mixture and mix gently.

Step 4

Add oil and mix. Put the batter into the greased baking tin and bake in the preheated oven at 180˚C for approximately thirty minutes.

Step 5

Turn over the cake onto a rack to cool. Cut into slices and serve.
