Brown Sauce

Ingredients

  • 1½ cups fresh orange juice
  • 1½ teaspoons orange marmalade
  • 12-15 fresh orange segments, pips discarded
  • 3 tablespoons butter
  • 1 tablespoon grated ginger
  • Salt to taste
  • 1 tablespoon refined flour (maida)
  • 1 teaspoon crushed red chillies

Method

  1. Heat 2 tablespoons butter in a non stick pan. Add ginger and saute for 1 minute.
  2. Add orange juice, salt and marmalade. Mix well and cook for 2-3 minutes.
  3. Combine remaining butter with refined flour in a bowl. Mix well and divide the mixture into small portions.
  4. Add red chillies to pan and mix. Add butter-flour mixture portions and mix well with a whisk.
  5. Add orange segments, mix well and cook till the sauce thickens.
  6. Serve hot with Classic Roast Chicken.
