Beetroot Salad With Orange Dressing

Ingredients 

  • 600 grams beetroots
  • 1/4 cup orange juice
  • 1 tablespoon salad oil
  • 1/4 teaspoon white pepper powder
  • 1/4 teaspoon mustard powder
  • 1/2 teaspoon orange rind
  • 1/4 cup spring onions rings

Method

  1. Boil the betroots. When cool, peel and dice them into half-inch cubes. Chill them.
  2. Mix orange juice, oil, salt, pepper, mustard powder and orange rind in a bowl and whisk till the mixture is homogeneous.
  3. Pour the dressing over the beetroot pieces and garnish with rings of spring onion.
