How to make Baingan ka Bharta -

This delicious roasted mashed brinjal dish is one of the most comforting things to eat along with crisp paranthas. Large brinjals are charred on an open flame, mashed and mixed along with chopped onions, tomatoes and basic spices. The mouthwatering smoky flavour that comes from charring the baingan is what makes this dish so amazing.

Quick to prepare and delicious to eat a baingan ka bharta is a must on every Punjabi menu. Different versions of this popular bharta are made in several states across the country. Large brinjals charred over an open flame are mashed and sautéed along with onions, tomatoes and red chilli powder, garnished with coriander. A perfect dish to go along with hot rotis or paranthas.

Ingredients for Baingan ka Bharta Recipe

  • Brinjal 1 large

  • Oil 3 tablespoons

  • Onions chopped 5 large

  • Tomatoes chopped 3 medium

  • Salt to taste

  • Red chilli powder 1 teaspoon

  • Fresh coriander leaves chopped 2 tablespoons


Step 1

Roast the brinjal on a medium flame till well cooked and the skin has charred completely.

Step 2

Cool, peel and mash.Heat the oil in a non-stick pan and sauté the onions till light golden brown.

Step 3

Add the tomatoes, salt and chilli powder, and sauté till the masala is cooked and the oil rises to the surface.

Step 4

Add the mashed brinjal and mix well. Lower the heat and cook for four to five minutes.

Step 5

Add the chopped coriander and mix well. Serve hot.
