Method

  1. Preheat oven to 170°C. Place egg whites in a cake batter mixer. Combine half the sugar with egg white powder and add this to egg whites. Whisk well until light and fluffy. Add salt and continue to whisk.
  2. Sift remaining sugar with refined flour in a bowl. Add almond essence and vanilla essence to eggs and whisk well.Transfer egg mixture in a bowl and fold in flour mixture in three batches.
  3. Transfer the batter into cake tins and place in preheated oven. Bake for 25-40 minutes. Remove from heat and place the tin upside down on a cooling rack. Remove cake from mould.
  4. Slice cake and sprinkle powdered sugar on top.
  5. Serve.
