Ingredients

  • 25-30 baby potatoes, boiled and peeled
  • 2 tablespoons mustard oil
  • ½ teaspoon carom seeds (ajwain)
  • 2 bay leaves
  • 2-3 green chillies, finely chopped
  • 2 tablespoons ginger-garlic paste (70% ginger and 30% garlic)
  • ½ teaspoon red chilli powder
  • ¼ teaspoon turmeric powder
  • ½ teaspoon roasted cumin powder
  • ¼ teaspoon black salt
  • Salt to taste
  • Lemon size tamarind ball soaked in ½ cup water

Method

  1. Heat oil in a non stick pan, add carom seeds, bay leaves, green chillies, ginger-garlic paste and sauté. 
  2. Add potatoes, red chilli powder, turmeric powder, roasted cumin powder, black salt, salt and sauté.
  3. Strain the tamarind water into the pan and mix well. 
  4. Cover and cook on low heat for 3-4 minutes or till the mixture become dry. 
  5. Transfer into serving bowl and serve hot.
