A steaming bowl of soup on a chilly day is what bliss really is about. Besides the comforting factor, soups are also great for you because they are highly nutritious and fill you up without making you feel stuffed! Perhaps one of the greatest benefits of soup is that it can be made from almost anything and that too in minutes. We bring to you 10 such soups that will make winter nights seem like a sunny spring day!

 

 

 

  1. Cream of asparagus and almond soup –  A luscious creamy soup made with pureed asparagus and almonds. The pale green colour of the soup is a complete contrast to the vibrant taste. Add in a spoonful of pureed spinach for more health and some toasted almond slivers for crunch! This could be your custom made bowl of warmth this winter!
  2. Mutton Stew The zing from the spices is balanced out perfectly with rich coconut milk in this Kerala style stew. It tastes best when eaten with soft fluffy appams, but you could also add a bowl of fresh veggies and make it a meal in itself.
  3. Brinjal and smoked chilli soup Brinjal isn’t a very common ingredient used in a soup, and we wonder why because this recipe of a smoked brinjal and chilli soup is so good it should be a regular on your food menu this winter. A wholesome earthiness from roasted eggplant and spice from the chillies blend beautifully to create this flavourful creamy soup.
  4. Mushroom CappuccinoThis is not really a cappuccino but it can lift you up just like one. Over a rich earthy soup made with mushrooms, sits a light cinnamon flavoured foam. We have used button and chanterelle mushrooms, but you can use any of your choice. A mushroom cappuccino looks just like a warm cup of coffee, but it tastes way better! Perfect to cosy up on a cold, dark night with!

Gajar shorba with crisp spinach and toasted sesame This soup is perfect for cold nights, because it uses ingredients that are winter foods in the true sense, be it carrots, spinach or sesame seeds. It is also perfect for parties because it looks gorgeous plus the flavour and texture profiles are undeniably made to impress!
  6. Sweet corn crab meat soup Who doesn’t love a bowl of sweet corn soup. This one is a flawless combination of sweet corn kernels and soft crabmeat in a thick broth. If you don’t get fresh crab meat easily use canned or substitute it with prawns or chicken- tastes just as good.
  7. Thai Hot and Sour SoupJust like the name suggests, this pungent hot and sour soup has all the flavours of Thailand. Chicken broth, kaffir lime leaves, lemon grass and Thai red chillies, with these great ingredients this soup is definably going to warm you inside and out!
  8. Panchavarna RasamA broth made with five types of lentils so it’s obviously packed with all kinds of proteins, as for the fabulous flavour, a dash of freshly made rasam powder is what does the trick. Have this as a soup or along with lemon rice and you will salute the South for such a fabulous recipe!
  9. Potato and Corn Chowder in a bread BowlThis really simple heartwarming recipe for chowder is made with an ingredient perfect for winter – potatoes! To this one we have added pureed sweet corn and served it up in bowl made with a hard crust bread bun. Feel free to modify your potato chowder with cheese, chopped veggies or even pieces of shredded chicken.
  10. Chicken Noodle Soup A list of winter soups is incomplete without a wholesome chicken soup. So last but absolutely not least on this list is a Chicken Noodle Soup – a spicy broth of chicken with a perfect bite from noodles in each spoonful. Top this up with crunchy beansprouts and a dash of fish or light soy sauce and a squeeze of lime – you are sure to go to bed with a smile on your face. Probably wake up with one too!
