Why is fresh pineapple unsuitable for puddings?

Pineapple is a wonderful fruit and makes many a lovely dessert. Try fresh pineapple in ananas ka meetha or ananas ka sheera. Fresh pineapple is no doubt good for salads and stir fried preparations as also chutneys.

When it comes to desserts that require it to be set, it is recommended that you should not use fresh pineapple but only tinned pineapple or cooked pineapple or stewed pineapple. Fresh pineapple has an enzyme that prevents gelatin or jelly from setting.

To stew fresh pineapple, take some slices and cover with water that is sufficient to just cover them. Add sugar to taste and allow to come to a boil. Cook for at least five to ten minutes. Cool and use.
