A refreshing salad, a delicious dumpling soup and an ice cream – yes ice cream too! Take a look at these super recipes that get made within 30 minutes, all you need is to do the right kind of prep.

Menu: Watermelon and Fresh Mozarella Salad

Vegetable Soup with Lemon Parsley Dumplings

Shopping list

1 small watermelon

200 grams of mozzarella cheese balls

1 small bottle of balsamic vinegar

100 grams of castor sugar

1 small packet of basil leaves

1 packet of mix micro greens

200 grams of button mushrooms

½ kg carrots

1 tin of bamboo shoots

1 bunch of spinach leaves

1 leek

1 packet of stock seasoning

50 grams of parsley

1 small packet of cornstarch

200 grams bread crumbs

6 eggs

1 bottle of Parmesan cheese powder

6 bananas

1 packet of cocoa powder

200 ml of fresh cream

1 small bottle of vanilla essence

100 ml of honey

100 grams of walnuts

For faster preparation

Make the dressing for salad by reducing balsamic vinegar along with sugar, till it coats the back of the spoon. Process the watermelon and cut into cubes. Refresh basil and micro greens. Process the vegetables for soup. Prepare the stock and make the dumplings. Toast the walnuts for ice cream and then chop them. Blend together bananas, cocoa, cream vanilla essence and honey together. Add the walnuts and refrigerate it.

How to go about it

Assemble the salad then start with the soup by heating the stock and then adding the dumplings, spinach, parsley and lemon juice. Serve and finally scoop the ice cream and enjoy.
