  • Carrots peeled and cut into halves
    10-12
  • Ginger finely chopped
    1 tablespoon
  • Sugar
    7-8 tablespoons
  • Fresh mint leaves
    2 tablespoons
  • Lemon
    1
  • Ice cubes
    as required

Method

Step 1


Heat 2 cups water in a non-stick pan. Add ginger and sugar and stir well. Let it cook till the sugar dissolves.

Step 2


Place the carrots in a juicer and squeeze out the juice alongwith mint leaves.

Step 3


Squeeze out juice of lemon into individual glasses, add 3 tbsps ginger sugar syrup, ice cubes and top with the carrot juice. Stir well.

Step 4


Serve chilled.
