Ingredients for Quinoa Pomegranate and Spinach Salad Recipe

  • Quinoa cooked 1/2 cup

  • Pomegranate pearls 1/2 cup

  • Baby spinach leaves 4 cups

  • Cucumber peeled and diced 1 small

  • Apple chopped 1 medium

  • Onion chopped 1 small

  • Dressing

  • Extra-virgin olive oil 3/4 cup

  • Apple cider vinegar 1 teaspoon

  • Salt to taste

  • Black pepper powder 1/4 teaspoon

  • Italian seasoning 1/4 teaspoon


Step 1

Combine baby spinach, cucumber, apples, quinoa, onion and pomegranate in a bowl and mix well.

Step 2

To make dressing, combine olive oil, vinegar, salt, pepper powder and Italian seasoning in another bowl and mix well.

Step 3

Pour the dressing over the salad and serve.
