Ingredients list for Oodles of Noodles

  • 200 grams Noodles boiled
  • 1 tablespoon Oil
  • 2 Spring onions sliced
  • 1 small Yellow capsicum sliced
  • 1 small Red capsicum sliced
  • 4-5 French beans sliced diagonally and blanched
  • ½ cup Sweet corn kernels boiled
  • 2 teaspoons Soy sauce
  • to taste Salt
  • 2 tablespoons Hot and sweet tomato ketchup
  • 1 tablespoon Sweet chilli sauce
  • ¼ cup Bean sprouts
  • 2 stalks Spring onion greens sliced

Method

  1. Heat the oil in a non stock pan; add the spring onions and stir-fry for 1-2 minutes. Add the capsicums and French beans and stir-fry for a few minutes.
  2. Add the sweet corn and soy sauce and mix well. Add the noodles and salt and toss to mix.
  3. Add the hot and sweet tomato ketchup and sweet chilli sauce. Toss till well combined.
  4. Add the bean sprouts and spring onion greens and mix well. Serve hot.
