Ingredients

  • Penne , boiled
    300 grams
  • Yellow bell pepper, pureed
    1/2 cup
  • Red bell pepper, pureed
    1/2 cup
  • Yellow bell pepper, Roasted and peeled
    1 strips
  • Red bell pepper, Roasted and peeled
    1 strips
  • Extra virgin olive oil
    4 tablespoons
  • Garlic cloves,chopped

  • Shallots, peeled and halved
    60 grams
  • Fresh basil leaves

  • Crushed black peppercorns
    to taste
  • Salt
    to taste
  • Goat cheese
    150 grams

Method

Step 1


Heat 2 tbsps extra virgin olive oil in a non stick pan, add garlic and sauté for few minutes. Add shallots and sauté.

Step 2


Add roasted bell pepper strips and sauté for a few minutes. Tear basil leaves and add the mixture.

Step 3


Add red and yellow bell pepper purees and mix well.

Step 4


Add boiled penne and crushed black peppercorns and mix well.

Step 5


Add remaining extra virgin olive oil and salt and mix well.

Step 6


Garnish with goat’s cheese and serve.
