Red and yellow capsicum purees cooked with garlic, shallots and penne and served with goat's cheese.

Red bell pepper, pureed

Extra virgin olive oil
Shallots, peeled and halved
Fresh basil leaves
Crushed black peppercorns
Heat 2 tbsps extra virgin olive oil in a non stick pan, add garlic and sauté for few minutes. Add shallots and sauté.
Add roasted bell pepper strips and sauté for a few minutes. Tear basil leaves and add the mixture.
Add red and yellow bell pepper purees and mix well.
Add boiled penne and crushed black peppercorns and mix well.
Add remaining extra virgin olive oil and salt and mix well.
Garnish with goat’s cheese and serve.
