Warm Thai Noodle And Papaya Salad

Ingredients 

  • 100 grams glass noodles
  • 1/2 medium green papaya, sliced
  • 3 tablespoons oil
  • 4 garlic cloves, chopped
  • 1 celery stalk,sliced
  • Salt to taste
  • 1/2 medium green capsicum, cut into 1/2 inch pieces
  • 1/4 teaspoon white pepper powder
  • 2 tablespoons fish sauce
  • 1 1/2 teaspoons brown sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh coriander leaves 
  • 1/2 cups roasted peanuts, crushed
  • 1 cup bean sprouts

Method

  1. Soak the noodles in hot water for a few minutes. Drain and refresh in cold water. Drain and set aside. Heat the oil in a non stick pan.
  2. Add the garlic and sauté till reddish brown. Add the celery and green papaya. Mix well and sauté. Add salt and capsicum and mix well.
  3. Add the pepper powder and noodles. Mix well and sauté. Add the fish sauce, brown sugar, lemon juice, coriander leaves and half the peanuts.
  4. Mix well and cook on medium heat for sometime. Serve the salad, garnished with the bean sprouts and the remaining peanuts.
