Ingredients 

  • 100 grams glass noodles
  • 1/2 medium raw papaya, peeled and sliced
  • 3 tablespoons oil
  • 4 garlic cloves, finely chopped
  • 1/2 medium green capsicum, cut into 1/2 inch pieces
  • 1 celery stalk, sliced
  • 2 tablespoons fish sauce optional
  • Salt to taste
  • 1/4 teaspoon white pepper powder
  • 1/2 cup roasted peanuts, crushed
  • 1 cup bean sprouts
  • 1 tablespoon lemon juice
  • Finely chopped fresh coriander leaves + a few sprigs

Method

  1. Soak the noodles in the hot water for a few minutes. Drain, refresh and add one-tablespoon oil. Mix well. Heat remaining oil in the pan. Add the garlic and stir-fry briefly or until light golden in colour.
  2. Add papaya slices, capsicum, celery and stir-fry for a minute. Add the noodles and toss. Season with the fish sauce, salt and pepper powder. Remove from heat.
  3. Add crushed roasted peanuts and bean sprouts. Add lemon juice, mix well and serve warm garnished with the coriander leaves.
