Ingredients
- 100 grams glass noodles
- 1/2 medium raw papaya, peeled and sliced
- 3 tablespoons oil
- 4 garlic cloves, finely chopped
- 1/2 medium green capsicum, cut into 1/2 inch pieces
- 1 celery stalk, sliced
- 2 tablespoons fish sauce optional
- Salt to taste
- 1/4 teaspoon white pepper powder
- 1/2 cup roasted peanuts, crushed
- 1 cup bean sprouts
- 1 tablespoon lemon juice
- Finely chopped fresh coriander leaves + a few sprigs
Method
- Soak the noodles in the hot water for a few minutes. Drain, refresh and add one-tablespoon oil. Mix well. Heat remaining oil in the pan. Add the garlic and stir-fry briefly or until light golden in colour.
- Add papaya slices, capsicum, celery and stir-fry for a minute. Add the noodles and toss. Season with the fish sauce, salt and pepper powder. Remove from heat.
- Add crushed roasted peanuts and bean sprouts. Add lemon juice, mix well and serve warm garnished with the coriander leaves.
