Strawberry Lemon Frozen Yogurt

Stewed strawberries mixed with yogurt and gelatin and served frozen.

  • Strawberries
  • Lemon juice
    2 tablespoons
  • Lemon rind grated
    1 tablespoon
  • Yogurt whisked
    2 cups
  • Sugar
    1/2 cup
  • Gelatin
    2 tablespoons
  • Sweetened whipped cream
    3 tablespoons


Step 1

Hull strawberries and roughly chop. Place in a non stick pan and add sugar, lemon rind and lemon juice. Mix and cook till soft. Cool. Heat ½ cup water in microwave for 30 seconds. Add gelatin and mix well.

Step 2

Take yogurt in bowl. Add cooked strawberries and cream and mix well. Add gelatin and whisk well. Freeze till completely set. Scoop and serve chilled.
