Very correctly termed as the ‘plant of life,’ each and every part of the coconut plant is useful in one or the other way.

Ingredients for Spiced Coconut Sweet Potato Recipe

  • Coconut Milk 2 cups

  • Sweet Potato cut into pieces and soaked 450 grams

  • Oil 1 tablespoon

  • Onions finely chopped 2 medium

  • Ginger grated 1 1/2 tablespoons

  • Garlic pressed 3-4 cloves

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Soy sauce 1 tablespoon

  • Fresh red chillies 3

  • Lemon 1/2

Method

Step 1

Heat oil in a non stick pan. Add onion and sauté till soft. Add ginger, garlic and turmeric powder, mix well and cook for 1 minute.

Step 2

Add sweet potato pieces and mix well. Add 1 cup coconut milk, salt, soy sauce, mix, cover and cook for 2 minutes.Chop fresh red chillies and add.

Step 3

Mix well, add remaining coconut milk and mix again. Cover and cook till sweet potatoes are soft. Squeeze lemon and add its juice and mix well. Serve hot.
