Ingredients for Spaghetti with Prawns in Leek and Tarragon Creamy Recipe

  • Spaghetti boiled 1½ cups

  • Prawns (kolambi/jhinga) shelled and deveined 12-15

  • Leeks 2

  • Dried tarragon 1 teaspoon

  • Olive oil 2 tablespoons

  • Garlic minced 1 tablespoon

  • Salt to taste

  • Black pepper powder to taste

  • Lemon rind 1 teaspoon

  • Lemon juice 1 tablespoon

  • Fresh cream 1 cup

  • Parmesan cheese shavings 5-7

Method

Step 1

Roughly chop leeks.

Step 2

Heat olive oil in a non-stick pan, add garlic and sauté for a minute.

Step 3

Add chopped leeks and sauté for 2-3 minutes.

Step 4

Add prawns, salt, pepper powder, lemon rind, lemon juice and fresh cream and cook for 2-3 minutes.

Step 5

Add spaghetti, tarragon, parmesan shavings reserving some for garnishing and cook for 2-3 minutes.

Step 6

Serve hot garnished parmesan shavings.
