The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Sai Bhaji Recipe

  • Spinach 3 medium bunches

  • Khatta Bhaji 50 grams

  • Dill leaves 50 grams

  • Oil 3 tablespoons

  • Cumin seeds 2 teaspoons

  • Garlic cloves chopped 10

  • Ginger piece chopped 1 inch

  • Green chillies chopped 3

  • Potatoes cut into 1 inch cubes 2 medium

  • Split Bengal gram (chana dal) soaked 1/2 cup

  • Salt to taste

  • Turmeric powder 1 teaspoon

  • Red chilli powder 1 1/2 teaspoons

  • Coriander powder 2 tablespoons


Step 1

Heat oil in a pressure cooker. Add cumin seeds and sauté till they change colour.

Step 2

Add garlic, ginger and green chillies and continue to sauté.

Step 3

Chop spinach, khatta bhaji, and dill leaves

Step 4

Add potatoes and mix well. Add chana dal and all the greens and mix.

Step 5

Add salt, turmeric powder, red chilli powder, coriander powder and mix.

Step 6

Add a little water and mix well. Close the cooker with the lid and cook under pressure till 1-2 whistles are given out.

Step 7

Open the lid when the pressure reduces and blend with a hand blender.

Step 8

Serve hot.
