Ingredients
- 4-5 large carrots
- 1/2 cup raisins
- 6-8 walnut kernels, crushed
- 2 tablespoons lemon juice
- 1/4 teaspoon black salt (kala namak)
- Salt to taste
- 1 green chilli,chopped
- 1/4 teaspoon crushed black peppercorns
- 1 tablespoon honey
- 6-8 fresh mint leaves
Method
- Thickly grate carrots.
- Wash raisins, drain and squeeze out the excess water and add to the grated carrots.
- Add walnuts and mix.
- Combine lemon juice, black salt, salt, green chilli, crushed peppercorns, honey.
- Add a few mint leaves broken with hand.
- Just before serving add the dressing to the grated carrots and toss.
- Serve garnished with the remaining mint leaves.
