Ande ka Funda

Menu: Powerhouse of energies, proteins and everything good – egg it is. It is not just like that a popular television advertisement and even celebrities endorse this white wonder to be had daily. Remember “Sunday ho ya Monday, roz khao ande!” So here are some of the recipes with egg that you can make a part of your meal – begin with a fun Anda Papdi Chaat, make a Coconut Egg Curry for the mains and have flavourful Egg Patties for the snack time!

Shopping list

13 eggs
1 small packet puris
1 packet mix sprouts
1 packet tamarind chutney
50 grams nylon sev
1 small packet coconut milk
1 packet tamarind paste
100 grams American sweet corn kernels
1 packet chaat masala

For faster preparation
Boil eggs and peel. Chop onions, and cut the eggs into halves for the gravy. Sauté the onions, add spices and cook the gravy Cool and blend till smooth. Chop the eggs for the chaat. Chop onions, tomatoes. Boil potatoes, peel and cut them. Boil sprouts. Grate the eggs for the patties. Add the seasoning and make the mixture ready and shape them into patties.

How to go about it
Heat oil and shallow-fry the patties till light golden. Assemble the papdi chaat in the serving plate and garnish with nylon sev. Cook the coconut gravy and finish off with coconut milk. Assemble the eggs on the plate and pour the prepared gravy on top of it. Serve garnished with chopped coriander.
