Ingredients list for Papeta par Eeda

  • 2 medium Potatoes peeled and soaked in water,
  • 4 Eggs
  • 2 tablespoons Oil
  • ½ teaspoon Cumin seeds
  • 3 medium Onions finely chopped
  • 1 medium Tomato finely chopped
  • to taste Salt
  • 2 Green chillies finely chopped
  • a few Fresh coriander leaves chopped

Method

  1. Heat oil in a non-stick pan.
  2. Cut potatoes into thin slices.
  3. Add cumin seeds and onions to the pan and sauté till the onions turn brown or for 5-7 minutes.
  4. Add tomato, salt, mix well and cook till tomato turns soft.
  5. Add green chillies and mix well. Add potato slices, spreading all over the pan and cook on low heat till potatoes are almost done.
  6. Lower heat, break eggs one by one onto the potatoes. Sprinkle salt and chopped coriander on top, cover and cook for 5 minutes.
  7. Serve immediately.
