Tomato and Basil Paneer

Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Tomato and Basil Paneer Recipe

  • Tomatoes blanched and peeled 4 medium

  • Basil leaves 10-12

  • Paneer (cottage cheese) cut into cubes 250 grams

  • Oil 2 tablespoons

  • Garlic chopped 2 tablespoons

  • Tomato puree 1/2 cup

  • Salt to taste

  • Crushed black peppercorns to taste

  • Red chilli flakes 2 tablespoons

  • Cream 1/4 cup


Step 1

Chop tomatoes and put in a blender jar. Blend into a smooth puree.

Step 2

Heat oil in a non stick pan, add garlic and sauté for ½ minute. Add onions and sauté till lightly browned.

Step 3

Add freshly pureed tomatoes and tomato puree and mix well.

Step 4

Add salt and crushed black peppercorns and mix well. Add paneer and mix well.

Step 5

Add red chilli flakes, basil leaves and cream. Mix well and cook for 1 minute.

Step 6

Serve hot.
