Heat mustard oil in a non-stick wok, add asafoetida and cumin seeds and saute for 1 minute. Add ridge gourds and mix. Saute for 1-2 minutes. Add red chilli powder, turmeric powder, garam masala powder and salt and mix well. Roughly chop tomatoes, grind them in a mixer and add to the wok. Mix well and cook for 6-8 minutes. Add tamarind pulp and sugar and mix well. Cook for 2 minutes. Chop coriander leaves and add to the wok and mix well.
