Also called as okra and gumbo in the rest of the world, ladyfingers are had best when cooked fresh. Stuff with a tangy masala, deep-fry to crisp with peanuts, serve in raita or batter fry as pakoras, this finger is definitely an all-rounder!  It even takes the sour of lemon or dry mango powder very well. When buying, look for young pods free of bruises, tender but not soft, and no more than four inches long.

Ingredients for Sindhi Pyazwali Bhindi Recipe

  • Ladyfingers (bhindi) 500 grams

  • Onion 1 medium

  • Oil 4 tablespoons

  • Ginger 1 inch

  • Salt to taste

  • Tomatoes finely chopped 2 medium

  • Turmeric powder 1/4 teaspoon

  • Coriander powder 1 tablespoon

  • Green chillies 2

  • Red chilli powder 1 teaspoon

  • Garam masala powder 1/2 teaspoon


Step 1

Cut lady’s fingers into thick roundels.

Step 2

Heat 3 tbsps oil in a non-stick pan, add lady’s fingers and mix well and saute on medium heat till done.

Step 3

Heat remaining oil in another non-stick pan. Roughly chop onion and add to the 2nd pan and saute.

Step 4

Finely chop ginger and add to the 2nd pan and sauté for half a minute.

Step 5

Add salt to the 1st pan and mix well.

Step 6

Add tomatoes to the 2nd pan and mix well. Add turmeric powder, coriander powder and mix well. Cook till the tomatoes become soft.

Step 7

Roughly chop green chillies and add to the 2nd pan. Add red chilli powder and mix well. Add cooked lady’s fingers and mix well. Add garam masala powder and mix well. Cook for 2-3 minutes.

Step 8

Transfer into a serving plate and serve immediately.
